..Strawberry Soup..
2-cups cold strawberries
1 cup low fat buttermilk
1 tablespoon plus 1 teaspoon sugar
mint leaves _(Optional)
In food processor blend the first 3 ingredients..serve immediatley..garnish with mint
..I havn't tried this but Granddaughter Kristina and I are goiing to..
1 envelope taco seasoning
1 pound ground beef
1 can green chillies chopped and drained
onion to taste
half an 8oz bag of corn chips
1 cup grated cheddar cheese
8 oz sour cream
jar mild taco sauce
heat oven to 350..in fryinng pan prepare beef..stir in chillies onion..spoon into pie plate sprinkle with cheese put sour cream on top.. -

..Yep ruts n greens..my hubby is a real good cook..one day while shopping he said he was going to make some ruts n greens..they were very good..but I only liked them when they were first made.

I found some recipes that called for garlic, but I do not recall most here using garlic..this recipe does sound about right..plain and simple..fatback..that is it..!!..we do have these for New Years..
Again this was something I saw no difference in the way my mom cooked the chicken and my mother in law or others cooked it..!!..
I have always liked sweet taters..up home I think we tend to candy or bake them more..here it is a casserole..and everyone makes it differently..
..one thing I had never seen before was to take them and bake a bunch..individually wrap them and freeze..I was saying OK now what did we freeze them in? It had to be aluminum foil as you put them back in the oven and you sure could do not do that with clear wrap..!!.. My how the times change..
I loved them....TATERS..
A tradition for holiday meals...
3--cups mashed sweet potato
2-eggs
1--cup sugar
1--stick butter
1/2--cup milk
topping....
1--cup chopped pecans
1--stick melted butter
1--cup brown sugar
1/2--cup plain flour
Mix first five ingredients well..spread in baking dish..combine ingredients for topping, sprinkle over sweet potato mixture
pour butter over top..bake at 350 for 35-40 mins....

In the south everyone makes banana pudding, I do not think I have ever seen two people make it the same! Here is my recipe which went over pretty good.
Cook pudding as per directions (not the pie recipe, just the regular pudding recipe) each separately
Line bottom of Pyrex dish with wafers, thinly sliced bananas, pour some of hot pudding over this, repeat layers until used up. End with pudding on top. Chill well. Add Cool Whip when ready to serve.. Dig in..
I do not use the real ripe bananas as most do for banana pudding**
Recently, for my husband's birthday I made this with sugar free ingredients. I used the cook and serve vanilla pudding, this is hard to find, I last found it at Winn-Dixie. I used the Murray's sugar free vanilla wafers. I added an extra thin layer of low fat Cool-Whip to the top. It really was good, much better than I figured it would be. I got about one spoonfull. Our son, who does not need the sugar-free even said it was good, came back looking for more

And then there are peanuts..when I first came to the south they laughed at me as one time they mentioned we were going to go get peanuts..when we came to this field I asked..WHERE ARE THE PEANUT TREES? Now I ask if cashews grow on trees why don't peanuts..??..
Now I love boiled peanuts. My hubby buys what they call green peanuts (raw ones). You take these and boil them in salt. They are very good. I end up boiling peanuts for 3 days, swear I am freezing enough to last until Christmas and get upset when Thanksgiving comes and they are all gone.
I declare that I have this process down to a T. I have 2 large pans I use. I shut the doors off so it does not get too hot. The problem is trying not to eat them all as you go along. I leve em hot, cold, and I do tend to undercook mine. I like them that way. I swear this happened as a child. I am sure I once took peanut butter and put it on a tray to make peanuts in the oven.
We use to go here to get the peanut butter especially.

Carolina Treet is a barbecue sauce available in North Carolina, I'm not sure where else you can buy it. When I go to California, this is what I have to load in my suitcase. I had to take ham too!

That was my Dad's recipe:
Basically you crush as many soda crackers as you think you need to cover the chicken. I use a rolling pin to crush the crackers very fine.
Soak the chicken in the Carolina Treet. Then roll the chicken in the cracker mix. Bake in the oven at 350.... Now I will admit I have not heard of this before..I have though heard of the debate about barbecue..

My mother in law use to say..you've become a good southern cook..and I would reply..I do not cook anything differently than I did before..but I will have to admit..I did cook a lot of differrent items I had never cooked before..like pinto beans..peanuts..but the one item I was always asked to bring for the holidays I learned before moving here..that is the limas n tomatoes..
I searched for graphics and came across these strawberries. Right away I said this is it. Not only did I use to go pick strawberries but I always come back to the color red.
I am still tempted to go on out with my cane and pick some. There are just no strawberries as good as those you go pick yourself. My hubby and I use to make the easy jelly. It was so good. In California they had these real huge strawberries. MMM Now my hubby gets some at work that are grown in a hothouse.

For sure I never heard of hushpuppies up home. When people visit they want to go for seafood. There are mixes available..but none seem quite like the hush puppies you get in restaurants..and..there are different ones even in our town..

Combine .. 3 cups self rising corn meal..
1 egg..
2 tablespoons lard..
Bake at 350 until golden brown in a well greased cast iron pan..
For cracklin cornbread add 1 cup of cracklins..you buy cracklins in a package at the store..

Is it a southern thing..??.. I am not really sure, but my hubby does like it...hubby does like it..
